Carrot Cake & Banana Smoothie Bowl
One of my favourites to kickstart your morning in style, this vibrant recipe is sure to get you up and moving in no time!
200ml Greek yoghurt
1 large banana
Handful of baby carrots
4 big jujube dates (de-stoned)
1/4 tsp vanilla extract
1 tbsp ground cinnamon
A small handful of walnuts
2 tbsp shredded coconut
Dash of carrot juice
Grind down the cinnamon bark into a powder
Blend together the baby carrots in a blender
Add a dash of carrot juice and Greek yoghurt to the mixture, then blend again until smooth
Add the banana, a pinch of grounded cinnamon, 2 big jujube dates (remove the stone by hand) and vanilla extract to the mixture, and blend once more
Transfer to a bowl and add the handful of walnuts, shredded coconut, remaining grounded cinnamon and the remaining 2 big jujube dates (de-stoned) on top of the mixture
Serve and enjoy!
You're welcome to add any other dates/sweet fruit as a substitute for the big jujube dates (as these are high in fructose).
