Chicken with Wood Ear Mushrooms and Dried Lily Flowers is one of the most popular dishes in Chinese cuisine but might not be as well known in the West. It is a tasty and hearty meal that incorporates lots of our great ingredients – all of which are full of vitamins, amino acids and healing properties.
There are lots of different ways to make this dish, depending on preference and family tradition. This is my take on the recipe which you can adapt and share!

Ingredients
500g chicken breast
-
15g dried lily flowers
-
10g wood ear mushrooms
-
2 shiitake mushrooms
-
10 pitted jujube dates
-
Handful of grounded ginger root
100g Jasmine rice
Handful of spring onions
3 tsp light soy sauce
1/2 tsp dark soy sauce
1 tbsp oyster sauce
1 tsp cornflour
1 tsp sugar
1 tbsp sesame oil
A pinch of salt and pepper
Seasoning
Directions
Cut the chicken breast into small pieces.
Combine all the seasoning ingredients together in a bowl and then mix with the chicken breast pieces.
Cover the seasoned chicken breast and let it rest for around 20 minutes.
Soak the lily flowers, jujube dates and mushrooms separately until softened.
Blanch the lily buds and wood ear mushrooms in boiling water for around 2 minutes, then drain well.
Once drained, cut all of these into smaller pieces.
Combine these with the marinating chicken, and spread a handful of grounded ginger root on top.
Grab a wok, then steam the chicken over a high heat (with the lid on) for around 20 minutes (check next step after the first 10 minutes).
Get another pan and boil the Jasmine rice in boiling water for 10 minutes.
Once this time has elapsed, remove both the steamed chicken and Jasmine rice from the heat. Drain the rice and put to one side.
Garnish the steamed chicken with a handful of spring onions, then combine this with the Jasmine rice on a dish.
Serve and enjoy!
