Ingredients

10g dried adzuki beans

10g dried lotus seeds
1/2 cup of sweet rice
1/2 cup of rock candy/sugar
8 cups water
Directions
Wash and drain the adzuki beans and lotus seeds.
Bring 8 cups of water to the boil in a large pot.
Add the red adzuki beans and lotus seeds into the pot.
Simmer for around 2-3 hours on a low heat, stirring occasionally until the beans start to separate/fall apart.
Wash the sweet rice and add to the pot.
Simmer for a further 1 hour on a low heat whilst stirring occassionaly.
Once the mixture has formed a soup-like texture, remove from the heat and stir in the rock sugar.
Let the mixture cool to room temperature, then place the congee in the fridge until fully chilled.
Once chilled, serve and enjoy!
