About

Mung Beans (Lu Dou / Luk Dou), also known as Moong Beans or Green Gram, are small, nutrient-rich legumes that have been an essential part of Chinese cuisine and traditional diets for thousands of years. Valued for their mild, slightly sweet flavour and soft texture when cooked, mung beans are incredibly versatile and can be used in both sweet and savoury dishes.

These vibrant green beans are a popular ingredient in soups, stews, curries, and stir-fries, as well as in refreshing desserts such as a sweet mung bean soup. They are also widely used in sprouted form, adding a crunchy, nutritious boost to salads, noodle dishes, and stir-fried vegetables.

Lu Dou sits alongside Red Adzuki Beans (Hong Dou) and Soya Beans (Huang Dou) as one of the pulses in our range, and is classically cooked with Dried Lily Bulb (Bai He) in sweet soups.

Recommended Dosage

We recommend around 50g per portion.

Rinse, then boil for twenty to thirty minutes until soft. Unlike larger pulses they do not need soaking first, though an hour's soak shortens the cooking time. Cook thoroughly before eating. For sprouting, rinse and drain twice daily and use within a few days.

Store in an airtight container in a cool, dry place, away from direct sunlight.
