Ingredients

1 cup of Goji berries

1 pinch of ground cinnamon
3 large bananas
3 large eggs
2 cups of sugar
1 1/4 cup of all-purpose flour
1 tsp baking powder
1 tsp shredded coconut
Dash of vanilla extract
1 tsp vegetable oil
2 tbsp water
Pinch of salt
1 tsp of honey
Directions
Ground down the cinnamon bark until fine.
Slice up the bananas into small chunks, then transfer them to a bowl with the all-purpose flour and baking powder then mix.
Season with a pinch of ground cinnamon and salt.
Heat the vegetable oil over a medium-low heat, then add the dough.
When the pancake has cooked golden brown, turn and cook the other side until brown (20-30 seconds on each side should be perfect).
Once cooked, remove from heat and transfer to a plate.
Glaze with honey, then decorate with goji berries, bananas and shredded coconut.
Serve and enjoy!
