Why not try adding goji berries to muffins or scones? They make a great substitute or accompaniment to raisins with a sweet kick!
Ingredients
200g all purpose flour

30g goji berries
40g sugar
150ml milk
1 beaten egg
50g cubes of butter
1 tbsp baking powder
Handful of sultanas
Directions
Mix together the flour, baking powder whilst rubbing in the cubes of butter into a mixture.
Next, add the sugar, goji berries and handful of sultanas to combine the ingredients all together.
Pour in the milk and 1 beaten egg into the mixture to create a dough.
Knead the dough and roll out onto a floured surface until it combines into a thick mixture.
Using a small circular cutter, cut out 6 scones from the dough and place on a greased baking tray.
Bake for about 10 minutes at 220C (Gas Mark 7) / or until risen and golden.
Remove from the oven after this time has elapsed. Add a dash of butter/clotted cream in the middle if required.
Serve and enjoy!
