- 3 Dried Reishi Mushroom Slices
- 1 cup hot water
- 1 tsp honey
- 2 sprigs of fresh mint (1 for garnish)
Instructions:
- Steep the Dried Reishi Mushroom in hot water for 10-15 minutes.
- Add honey for sweetness and a sprig of mint.
- Strain, garnish with fresh mint leaves, and enjoy this calming elixir for relaxation.

- 2 tbsp honey
- 2 tbsp rice wine vinegar

- 185g Cooked brown rice
Instructions:
- Soak the Dried Wood Ear Mushrooms in hot water for 15 to 20 minutes.
- Chop vegetables into slices.
- Stir-fry Wood Ear Mushrooms and mixed chopped vegetables in sesame oil.
- Mix the soy sauce, sesame oil, honey and salt and mix into the stir-fry.
- Serve over cooked brown rice for a savoury and satisfying meal.

4. Nameko Miso Soup:
Ingredients:
- 150g Dried Nameko Mushrooms
- 480ml vegetable broth
- 2 tbsp miso paste

- 1 large onion, roughly chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, smashed
- 1 bay leaf
- 1 teaspoon whole black peppercorns
- 8 cups water
- Salt to taste
- Combine all broth ingredients in a large pot.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Strain the broth, discarding solids.
- Season with salt to taste.
