Dried Shiitake Mushrooms are a staple in East Asian cuisine and widely used in UK vegan and vegetarian cooking for their rich umami flavour and meaty texture. They are also valued in traditional Chinese medicine for their potential health benefits.
The Chinese have long regarded mushrooms as having special properties, Shiitake is believed to nourish the body's spirit and support overall wellness. Once available only through wild harvests, it is now the second most cultivated mushroom globally and highly sought after in UK wholefoods markets.
Naturally rich in plant-based protein, Shiitake mushrooms contain 8 essential amino acids, making them ideal for those looking to support nutritional wellness through natural food supplements and high-protein vegan ingredients. They sit alongside Dried Nameko Mushroom (Hua Zi Gu), Dried Agaricus Mushroom (Ji Song Rong), and Dried Reishi Mushroom (Ling Zhi) in our mushroom range.
Umami Depth: Shiitake bring a deep, savoury character to soups, stocks, and braises that few other ingredients match.
Plant Based Protein: Naturally a source of plant protein containing eight essential amino acids.
Meaty Texture: Once rehydrated, their firm bite makes them a popular substitute for meat in vegan and vegetarian cooking.
Traditional Heritage: Long valued in Chinese practice as well as in the kitchen.
Versatile: Suits soups, stir-fries, broths, and braises alike.
We recommend around 5g per portion.
Soak the mushrooms in warm water for twenty to thirty minutes until they soften. The soaking liquid carries a lot of the flavour, so strain it and keep it for stock. Slice and add to stir-fries near the end, or to soups and braises for longer cooking. Trim off the tough stems, or keep them for stock.
Store in an airtight container in a cool, dry place, away from direct sunlight.
